Potassium sorbate is a type of salt made from sorbic acid and is commonly used as a preservative to stop the growth of harmful microorganisms like molds, yeasts, and bacteria. It looks like white crystals or powder and easily dissolves in water. Its chemical formula is C6H7KO2.
Discovered in the mid-19th century from rowan berries, potassium sorbate is now an important ingredient for keeping many products fresh and safe. It is used in many industries because it is effective, safe, and helps maintain the quality of products without changing their taste, smell, or appearance.
Function and Uses
Potassium sorbate is used as a preservative to prevent the growth of microorganisms like molds, yeasts, and bacteria. This helps keep products fresh, safe, and longer-lasting. It is widely used in foods, beverages, cosmetics, and other items where spoilage can occur.
In foods and drinks, it stops spoilage without changing taste, smell, or appearance. In cosmetics and personal care products, it protects items like lotions and shampoos from contamination. Potassium sorbate is popular because it is effective, easy to use, and safe when used in small amounts.

Production/Sources
Potassium sorbate is made by combining sorbic acid with potassium hydroxide. Sorbic acid, which is the main ingredient, is produced through a chemical process starting with substances like ketene and crotonaldehyde. Once sorbic acid is created, it is neutralized with potassium hydroxide to form potassium sorbate. This process ensures a high-quality, consistent product that can be used in various industries.
Properties/Characteristics
- Chemical Formula: C6H7KO2
- Appearance: White, crystalline powder or granules
- Solubility: Highly soluble in water
- Stability: Stable under normal conditions but decomposes at high temperatures.
Conclusion
Potassium sorbate is a widely used and reliable preservative that helps keep products fresh and safe by preventing the growth of harmful microorganisms like molds, yeasts, and bacteria. Its ability to extend the shelf life of food, beverages, cosmetics, and other products without changing their taste, smell, or appearance makes it a popular choice in many industries. Potassium sorbate is effective, safe to use in small amounts, and works well in a variety of products. Its versatility and low toxicity ensure that it will continue to be an essential ingredient in products that need to stay fresh for longer.
